Coconut Pomegranate Overnight Oats

In case my last post didn’t make this painfully obvious, I’m a big fan of breakfast food.  ALL of the best foods are breakfast foods.  Eggs.  Pancakes.  Waffles (WAFFLES).  Frittatas.  Huevos Rancheros.  Quiche.  Etc, etc, etc.  Which is AWESOME!  But ain’t nobody got time for that on a weekday.  At least no one who likes to sleep.

Overnight oats are preeeeetty much the best thing in the whole world.  Healthy?  Yes– or at least, they can be as healthy or unhealthy as you choose.  Delicious?  Yes.  Very.  Fast?  Yes, thank god.  You have to do LITERALLY nothing in the morning to make these.  The sleep fairy just granted you an extra ten minutes of sleep and you better take advantage of it!

Coconut Pomegranate Overnight Oats

  • 2 c. Old-Fashioned Rolled Oats
  • 1 c. Coconut Milk
  • 1 c. Skim Milk
  • 1/2 c. Flax Seeds
  • 1/2 t. Coconut Extract
  • 1 t. Vanilla
  • 1 c. Pomegranate Arils (I like to reserve some additional arils for serving in the morning, along with a drizzle of honey)

Mix all of the above together and store overnight in a sealed container.  Eat.  Repeat, since this recipe will make enough to last all week!

That’s it!  The only breakfasts easier than this are toast or cereal, and neither is as delicious and nutritious as overnight oats.  And the best part about this recipe is that it is ENDLESSLY tweak-able.  All you have to have for overnight oats is a 1:1 ratio of oats to milk product.  Everything else is personalization.  Another of my favorite combos is to use half skim milk and half fat-free greek yogurt, a big squirt of honey, flax seeds, and a few tablespoons of peanut butter.  SO good.  The possibilities are endless, so get mixing!
